Protect the agreed particle condition through cooking, transfer and filling.
State fruit variety, preparation, size distribution, firmness and proportion. Whole fruit starts at preparation; accepted prepared pieces can bypass cutting. Puree alone cannot establish a fruit-piece product—identify the additional pieces and their addition stage in the recipe.
Agree samples and particle acceptance at cooker discharge and in the filled pack. This separates breakage from mixing, pumping and filling instead of treating low agitator speed as the complete answer.

Do not send the complete fruit-piece stream through a smooth-only refiner. Ingredient premixes may have their own dispersion requirements before joining the gentle product path. Confirm cooker, valve, pump and nozzle clearances with the actual fruit.
