Preservation of texture

Gentle is a performance requirement, not just a slow-speed label. Geometry, clearances, batch depth, addition timing and fruit firmness influence breakage.

Evidence chain

Sample before cooking, after discharge and after filling. Compare the same particle method at each point so pump or filler damage is not incorrectly blamed on the agitator.

Compatibility

Review the agitator and scraper arrangement as part of the chosen cooker. A separate high-shear premix may prepare ingredients without passing the finished piece-containing batch through it.
