List each fruit ingredient and the form in which it arrives. A puree ingredient, prepared pieces and whole fruit need not all pass through the same front-end machines. Define the accepted inlet for each stream and the addition sequence. Preparation capacity should match the batch loading window rather than relying on one average combined fruit rate.
Identify which visible pieces, fibres or inclusions control mixer and passage selection. Agree the target product condition at cooker discharge and filled pack. Minor-ingredient preparation and weighing should follow the named recipe, with any separate premix duty justified by that sequence. A single photographed machine does not establish suitability for every blend.
Provide the recipe range, colour or ingredient changeovers, planned batch schedule and available cleaning services. Map closed circuits and removable parts separately. Ask the quotation to identify cleaning scope, inspection access and any manual operations, so a nominal output figure does not hide the practical time between products.
