Start from the incoming texture

Whole fruit may need fruit-specific preparation and pulping. Purchased puree can enter at recipe preparation when it meets the required inlet specification. Fine refining is conditional; it is not added simply because the finished product is smooth.

Describe the spread at the intended assessment temperature. Include any accepted seeds or fibres and distinguish the initial pulp texture from the gel structure developed by the formulation.

A route for viscous, even product

Choose the recipe and cooking duty

Atmospheric and vacuum cooking are alternatives. Reduced-sugar development can apply to a smooth product, but requires its own gel-system and preservation review. Keep mixing, heat exposure and the pack process tied to the actual recipe.
