Assess lower-sugar products as their own formulation and preservation task.
Separate texture from formulation
A reduced-sugar product can be smooth or contain fruit pieces. Its chosen gel system, sweeteners, water balance and acidity must be developed together. Removing sugar from a conventional recipe does not establish the same gel behaviour or storage stability.
Provide the intended market, label category, storage conditions and pack to the qualified formulation/process reviewer. Confirm that the requested product is supported before treating it as a quoted equipment capability.

Build the trial around the product
Compare repeat batches, consistent sample methods and the packed product. A nominal Brix, vacuum level or hot-fill label does not promise a universal shelf life. Record which formulation and package were demonstrated and which changes need further assessment.
