Open jacketed kettle
The photographed arrangement shows two open vessels with top-mounted drives and surrounding pipework. A jacket supplies indirect heat while the selected agitator moves the changing product through the batch. Check wall exposure, minimum usable charge, foaming allowance, discharge and safe access against the actual recipe.

Reduced-pressure cooking needs a vessel, agitation, vapour path, condenser, vacuum source and controlled equalisation. It can change the boiling condition, but total heat exposure, product texture and the packed product still require trial evidence. No photograph on this page is presented as a verified vacuum model.
