Preparation method

Follow the chosen ingredient supplier’s dispersion and hydration requirements. The water, shear and order of addition belong in the formulation trial; a dry clump can persist even when the main batch is mixed.

Separate shear

A small premix can require different mixing intensity from the fruit batch. Keep aggressive dispersion out of the particle-preservation path when the product contains fruit pieces.

Recipe boundary

Sugar, acidity, ions and the specific pectin system interact. Reduced-sugar products require their own formulation and preservation review rather than simply removing sugar from a conventional batch.
