Batch control

Use a defined recipe version and ingredient identity. Weighing resolution and acceptable deviation differ between the fruit charge and a small acid or pectin addition.

Dissolving duty

A sugar solution or premix vessel is useful only when it serves the chosen recipe and sequence. Account for its water and solids in the batch; do not assume every project needs a separate syrup plant.

Interfaces

Define manual versus automated additions, dust control where needed, load-cell support and pipe forces, and reconciliation of additions that occur during cooking.
