Review agitator geometry, scraper contact, vessel coverage and the lowest usable charge. Scraping and bulk circulation perform different jobs; a motor nameplate does not prove either.
Record torque or load trend where available, visual circulation and temperature/endpoint samples. State the product temperature and measurement method when comparing viscosity.
This is a mixing duty integrated with the selected cooker. It is not an extra mandatory vessel, and high shear is not automatically appropriate after the gel system is developed.
