Scraped-surface mixing duty for jam production

Keep a smooth viscous batch moving across the heated surface.

Incoming

A smooth formulation whose rheology changes during cooking.

Handover

Mixed product with controlled wall contact and temperature distribution.

Working arrangement

Review agitator geometry, scraper contact, vessel coverage and the lowest usable charge. Scraping and bulk circulation perform different jobs; a motor nameplate does not prove either.

Trial evidence

Record torque or load trend where available, visual circulation and temperature/endpoint samples. State the product temperature and measurement method when comparing viscosity.

Equipment boundary

This is a mixing duty integrated with the selected cooker. It is not an extra mandatory vessel, and high shear is not automatically appropriate after the gel system is developed.

Cleaning, access and operating limits

Inspect scraper wear, shaft seals and product retained behind arms. Request safe removal and replacement instructions.

Settings must be demonstrated on the recipe; smooth texture is not proof of homogeneous heating.
