Strawberry colour, mango gel and apricot crystallization
Practical questions for fruit jam process selection and sample trials.
From the fruit to the process question
| Fruit / symptom | Check before changing equipment | Trial direction |
|---|---|---|
| Strawberry or blueberry loses colour | Oxygen pickup, heating history, pH and endpoint sampling | Compare vacuum and atmospheric trials at the same final recipe and packaging |
| Mango spread is too thin | Solids, pH, pectin grade, dispersion and gel after cooling | Evaluate puree refinement and a recipe-specific gel system; longer boiling is not always the answer |
| Apricot jam crystallizes | Sugar balance, dissolution, concentration, cooling and storage | Review the formulation and endpoint before simply changing cookers |
| Peach / apricot pieces break down | Ripeness, piece size, agitation and transfer shear | Test gentle agitation and particle-capable pumping |
| Pineapple leaves coarse fibres | Refiner screen, extraction yield and texture target | Compare pretreatment and refinement, then assess the finished spread |
Define a sample trial before sending fruit
Discuss the fruit, recipe boundary, sample quantity, target texture, filling pack and measurements you need. Ask whether a suitable trial setup and schedule are available, and agree handling, charges, test plan and reporting before shipping any sample.
A useful trial plan records input material, process sequence, temperatures, batch mass, final solids/pH, texture after cooling and observations. Trial availability, laboratory scope and delivery terms are confirmed case by case.
