Brix, acidity and the gel system

Keep measurement, formulation and preservation as connected but distinct decisions.

What the reading represents

A refractometer result reflects the sample’s refractive behaviour and is commonly used to assess soluble solids. Record the instrument, temperature handling, sample preparation and recipe basis. It is not a direct measure of whole fruit-piece content or all insoluble solids.

Recipe-specific endpoint

Fruit, sweeteners, added water and the gel system affect the target. Do not assign one Brix endpoint to every jam or substitute a reading for texture assessment. Compare samples prepared in the same way.

Acid and pectin

The chosen pectin or gel system has formulation-specific requirements. Ingredient preparation, sugar level, acid and other interacting ingredients should be reviewed together with the supplier’s guidance and product trials.

Separate safety assessment

Soluble solids and texture alone do not validate the final product’s preservation. The intended market, formulation, treatment, package and storage conditions belong in the qualified process review, especially for reduced-sugar products.
